Coriander seeds1 ½ tablespoons
Anise seed¼ teaspoon
Coarse ground pepper¼ teaspoon
Carrot Puree1 tbsp.
Cambray onion2 pieces (complete)
Boiled egg1 piece
Roasted New York1 piece of ½ inch
Rustic bread or ciabatta4 pieces
Roasted poblano peppers1 piece
Roasted red morron chile1 piece
Grilled cambray onions1 bunch
Habanero pepper3 pieces
  1. Start by blanching the habanero peppers to reduce their spiciness without losing their characteristic flavor.
  2. Next, finely chop the habanero peppers, cambray onions, and hard-boiled egg.
  3. Grind coriander seeds, anise seeds, and pepper to enhance mayo flavor.
  4. Mix the mayonnaise with apple cider vinegar, lemon juice, sugar, mustard, carrot puree, and the ground spices in a bowl. Incorporate the chopped habanero peppers, cambray onions, and hard-boiled egg. Refrigerate the mixture to enhance the flavors.
  5. Next, generously spread the prepared mayonnaise on the bread.
  6. Arrange slices of meat and roasted peppers (bell pepper and poblano pepper) and grilled cambray onions on the mayo-covered bread.
