Following is our recipe and ingredients for the preparation of the tacos and salsa:
Taco ingredients:
Ingredients | Qty |
Olive Oil | 2 tbsp. |
Avocado | 1 ½ large pieces |
Lime juice | 1 or 1 ½ pcs. |
Salt | to taste |
Skirt Steak | 300 grams |
Corn Tortillas | 8 to 10 pcs. |
Ingredients for the roasted habanero sauce:
Ingredients | Qty |
Strawberry tomatoes | 3 or 4 pcs. |
Wild tomatoes | 1 piece in halves |
Garlic | 2 cloves of garlic |
White onions | ¼ piece |
Habanero pepper | 3 or 4 pcs. |
Cilantro | 2 sprigs |
Lime | 1 ½ pieces (juice) |
Salt | 1 tsp |
Method for the roasted habanero sauce
- Roast the tomatoes, diced onion, Habanero chiles and garlic.
- With the help of the molcajete grind habaneros, garlic, onion and tomato.
- Season with the salt and lemon juice.
- Add chopped coriander at the end.
- Season to taste.
- Coarsely mash the avocado and season with olive oil, lemon and salt.
Method for tacos and salsa application:
- Roast the meat (preferably on charcoal).
- Salt just before turning over the grill.
- Remove from heat and let stand for a few minutes.
- Slice and put on the taco.
- Form the tacos by spreading a little avocado on each tortilla and on top of the sliced meat.
- Cover with enough habanero sauce.
