Instructions
- In a pan, sauté the onion until translucent to prepare the sauce that enhances the flavor of Huevos Motuleños.
- Then, add the tomato, ham, peas, and whole habanero peppers.
- Cook this mixture over medium heat for 15 to 20 minutes, stirring constantly to achieve a delicious and well-integrated sauce. Season to your liking and set aside.
- In another pan, fry the eggs with a bit of oil until they reach the desired level of doneness
- Meanwhile, you can heat the tortillas and spread them with a generous layer of refried beans, creating the perfect base for your Huevos Motuleños.
- Once the eggs are ready, place them on the tortillas. You can repeat this process, according to your preference, by adding another tortilla over the egg and placing one more on top.
- Finally, add the prepared sauce over the eggs. For a spicy kick and unique flavor, include roasted habaneros and fried plantains.
