Butter | 30 grams |
Rolled garlic | 2 or 3 cloves |
Habanero pepper | 1 or 2 pcs. |
Lime juice | 1/3 cup |
Sour cream | 2 tbsp. |

Galeana potato | 1.2 kilograms |

Instructions for the habanero sauce
- Fry the garlic and the habanero in pieces with oil and butter for a couple of minutes, until they begin to smell.
- Remove from heat, wait for it to cool (10 to 15 minutes).
- In a blender put the other ingredients of the sauce (lemon juice, cream, water, oil and salt).
- Add the freshly cooled habanero butter to the blender.
- Grind until a thick sauce is obtained.
- Rectify the seasoning and set aside.
Instructions for the potatoes
- In a pot cook the cambray potatoes (if they are large, cut them in half).
- Putting the potatoes on the fire from cold water.
- Salt.
- Boil until the potatoes feel soft when pierced with a fork.
- Drain potatoes.
- Spread on a baking sheet until cooled.
- Reserve.
- Once the potatoes are cold, bathe them with the habanero sauce.
- Place on a plate and garnish with chopped cilantro and serve.
