Aguachile with Habanero

Instructions
  1. Begin by peeling and deveining the shrimp, then rinse and drain them before transferring to a bowl.
  2. Squeeze lime juice over the shrimp, covering them completely. Let them marinate for 15 to 20 minutes.
  3. After marinating, drain the shrimp and season with salt to taste.
  4. Cut the cucumber and onion into very thin slices, using only half of each.
  5. Next, in a blender, combine the lime juice used for marinating the shrimp with a seedless habanero pepper, two tablespoons of cucumber, one tablespoon of onion, and one of cilantro. Blend until smooth.
  6. Place the shrimp at the bottom of a plate and pour the sauce over them until they are almost fully covered.
  7. To accompany, add red onion, cucumber, avocado, and habanero pepper cut into half-moons and seedless.
  8. Serve the aguachile with tostadas and a drizzle of olive oil.
  9. Finally, garnish the dish with fresh cilantro leaves.
  10. Enjoy this delicious aguachile with habanero!
