Arugula 6 cups
Mango 1 piece
Habanero pepper 2 pcs
Avocado 1 piece
Red onion 1/2 piece
Lime juice 4 pcs
White vinegar 1 tbsp
Orange juice 4 tbsp
Olive Oil 4 tbsp
Ground cumin 1/2 tsp
Chopped kale 1/2 cup
Salt and pepper to taste
Instructions
  1. Preheat the air fryer to 160°C (320°F)
  2. Wash and dry kale leaves. Toss with oil and air fry for 15 mins until crispy.
  3. Meanwhile, finely chop the habaneros and julienne the onion. Place them in a large bowl.
  4. In the same bowl, mix the juice of four lemons, white vinegar, orange juice, cumin, salt, and pepper to prepare the dressing. Adjust seasoning to taste.
  5. Dice the mango and avocado.
  6. On a salad tray, arrange the arugula leaves evenly.
  7. Add the diced mango, avocado, and onion slices to the arugula mixture.
  8. Generously pour the dressing over the salad, ensuring all ingredients are evenly coated.
  9. Gently mix the ingredients to ensure that all the flavors are well combined.
  10. Serve the mango and habanero salad immediately for a fresh, vibrant side that complements any meal. Enjoy the explosion of tropical and spicy flavors!
