Below you will find our recipe

Ingredients Qty
Panela Cheese 1 piece (400 g)
Habanero pepper 1 piece
Tomato 3 pcs
Dried beef (or beef jerky) 250 g
Onion 1/4 piece
Garlic clove 2 pcs
Instructions
  1. Begin by roasting the tomatoes and habanero peppers. This process not only enhances their characteristics but also imparts an irresistible smoky touch.
  2. Next, transfer these ingredients to a blender, and mix to create a unique sauce. Adjust the consistency according to your preferences, and once all the ingredients are blended and you achieve the desired texture, set aside the sauce.
  3. Finely chop the garlic cloves and onion.
  4. In a skillet, add the garlic and onion; sauté until they turn golden brown.
  5. Incorporate the dried meat into the skillet and let it absorb the flavors of the garlic and onion. Cook over low heat for five minutes to seal and highlight its characteristic texture.
  6. Then, add the previously reserved sauce to the skillet. Simmer for another five minutes, allowing the ingredients to merge.
  7. Meanwhile, in a separate skillet, add the panela cheese, grilling it on both sides until it develops a golden layer.
  8. Finally, place the grilled panela cheese on a serving plate and top it with the Atropellado Norteño (dried beef mixture). Enjoy!
